Paleo Snickerdoodles

SO PLEASED WITH THIS TURNOUT 🙂 I was actually attempting to make them thicker and more like “pucks” to resemble a grain free snickerdoodle that I had in Boston, but these turned out more like the classic snickerdoodles which is fiiinnnee by me! Paleo and refined sugar free (this was the hardest part as snickerdoodles typically kind of rely on refined sugar!), may turn out with a flax egg if you are vegan, but I cannot attest to that yet! Let me know if you do try with a flax egg 🙂 Scroll for the full recipe.

Below are the snickerdoodles I tried in Boston! And above are the photos of mine.

You'll Need

  • 1 C almond flour

  • 1/3 C coconut flour

  • 1/4 C cashew or almond butter

  • 1/4 C melted coconut oil

  • 2 tsp vanilla extract

  • 1/4 tsp sea salt

  • 3/4 tsp cinnamon + 1 T more for the topping

  • 1/4 C maple sugar + 3 T more for topping

    • can sub cane sugar, will no longer be paleo/refined-sugar free

  • 1/4 C coconut sugar

    • can sub brown sugar, will no longer be paleo/refined-sugar free

  • 1 egg

  • 1/2 tsp baking soda

*P.S. you could probably just substitute 1/2 C of cane sugar for both sugars if you don’t mind the refined sugar or don’t have the other sugars on hand 🙂 I haven’t tried but I would love to hear how it turns out if you make it that way!
