Mint Mocha Cooler

One of my favorites! Refreshing and tastes like a mint condition cooler (you know, like the most delicious drink from Caribou?!). Though this one has MUCH less sugar and much more protein so yay! With the ingredients I used, it came out to 14 g sugar, 30 g protein (83.6 g of sugar, 7 g of protein in a mint condition cooler from Caribou). Alternatively, if you swap an equal amount of milk for coffee in this recipe you'll get more of a thin-mint-cookie-in-milkshake form... either way both options sounds great to me :-)

  • 1 C frozen cauliflower, see bottom for possible subs (I have been doing this for a long time and I cannot ever taste it! I used plain cauliflower rice this time that I bought in the freezer section, it's easy to fill a measuring cup because you can just pour it)

  • 1/2 C cold coffee (sub milk of choice if you do not want caffeine or don't like coffee. This is what would give you the "thin mint" flavor!)

  • 1/4 tsp peppermint extract

  • 1 scoop chocolate protein powder OR vanilla and add 3 T cocoa powder

  • 1/2 or full frozen banana

  • 1/4 C plain yogurt of choice (I used plain whole milk yogurt; can sub DF yogurt)

  • *optional* 1 scoop collagen peptides

Just THROW ALL OF THAT IN YOUR BLENDER AND BLENNNDDDD! You may have to stir it every 15 seconds or so with a big spoon until it reaches the desired consistency, but once you have it it's worth it! So yummy. Enjoy :-)

*you could try to do ice instead of cauliflower, but I cannot speak to results of doing that as I haven't tried! If I were to omit the cauliflower, I would add about 1/2 C of ice and do a full banana instead of 1/2.*make sure you have peppermint extract instead of mint extract... they're different!!!xo, Celiac Sweetie
