Buffalo Chicken Bites

PALEO-FRIENDLY, WHOLE 30 COMPLIANT, GLUTEN FREE, DAIRY FREE, SUGAR FREE! I intended for these to be more like chicken meatballs, but they weren't "thick" enough to hold the ball shape when I scooped them. So now they are chicken bites.. :-) This recipe makes 24 and you can customize how spicy yours are by the buffalo sauce you choose. They are delicious and filling! Perfect snack/meal to prep for the week, or work lunches, etc

.Ingredients:

  • 1 lb ground chicken

  • 3/4 C almond flour/meal

  • 1/4 C buffalo sauce of choice

  • 1 egg

  • 1-2 chopped green onions (optional)

Mix everything in a medium sized bowl with a fork or a spoon and use a cookie scoop to scoop onto a parchment or foil lined baking sheet. Bake at 400 º F for 20 minutes and enjoy! The sauce pictured on top of the bites is a mixture of buffalo sauce and almond milk cream cheese. Enjoy!
