White Bean Dill Pickle Dip

My mom bought a cream cheese dill pickle dip and said it was delicious, and of course after looking at the ingredients I couldn't have it. So I made my own!

You'll need...

  • 1/2 C white beans

  • 8-10 oz. cream cheese (I used Kite Hill almond milk cream cheese but it is up to you/your needs!)

  • 1/4 of a shallot (probably equal to 1 T)

  • 2 C dill pickles, coarsely sliced

  • 2 T pickle juice

  • 1/2 T minced garlic

  • 1/2 tsp fresh dill

  • Juice of 1/2 lemon

  • Salt to taste

To create

  1. First place the beans, pickle juice, shallot, and garlic in the food processor and process until it's pretty smooth

  2. Add everything else and process until you reach the consistency you are looking for

  3. Refrigerate and use as a dip for GF pretzels, crackers, carrots, celery... or whatever else you think of :-)
