Sweet and Spicy Gouda Grilled Cheese & Homemade Tomato Soup

Sweet n spicy gouda grilled cheese with fresh roasted tomato basil soup. So fancy-yet-easy when you’re craving a cozy meal during these cold months.

Tomato soup ingredients: 

  • 8 peeled garlic cloves 

  • 2 lbs roma  tomatoes 

  • 2 yellow onions 

  • 1/2 C fresh basil 

  • 2 C vegetable broth 

  • Dash of cayenne 

  • S&P to taste 

  • 3 T olive or avocado oil 


Grilled cheese (per sandwich ingredients): 

  • 2 slices GF bread 

  • Smoked Gouda, shredded 

  • 1/2 T chili oil 

  • Lots of butter! 

  • Spicy honey to taste 

To make the soup: 

1) Slice tomatoes in half and peel 8 cloves of garlic, toss in 2 T of oil and season with S&P 

2) Roast tomatoes and garlic at 400 for 45 minutes 

3) Caramelize your onions by adding 1 T oil to a pan over medium heat, add your sliced yellow onions and stir 

4) Stir occasionally and cook until the onions are soft and golden, about 20-25 minutes 

5) Blend tomatoes once they’ve cooled for 5-10 minutes, then add the onions, S&P, a dash of cayenne, fresh basil and blend again until smooth 

6) Add in 2 C veggie broth, blend once more and then transfer soup to a large pot or Dutch oven to bring to a simmer 

7) Shred smoked Gouda, spread butter onto one side of each slice of your GF bread 

8) Add desired amount of gouda to the unbuttered side of one slice and then add chili oil 

9) Place in a pan over medium heat with more melted butter and add a little bit more gouda and the other slice (butter side out) 

10) Cook until the bottom slice is crispy and golden brown and then flip, once both sides are golden brown and crispy and the cheese is melted, transfer to a plate 

11) Gently separate the slices of bread and drizzle hot honey on each slice and close the grilled cheese back up 

12) Slice and dip in your warm tomato basil soup. Garnish with heavy cream drizzle and basil!
