Cowboy Pasta Salad

The pasta salad you never knew you needed🔥 This has the perfect amount of spice, flavor, textures, and has more protein than the average pasta salad!

Pasta Salad Ingredients:

  • 16 oz GF pasta (I recommend Jovial for pasta salads)

  • 1 lb ground beef

  • 4 oz can diced green chilies

  • ⅓ C roughly chopped pickled jalapenos

  • 1 green bell pepper, chopped

  • 1 pint cherry tomatoes, halved or quartered

  • 15 oz black beans, drained and rinsed

  • 15 oz corn, drained

  • ½ C cilantro

  • 6-8 slices cooked bacon, chopped

  • 1 C shredded cheddar

  • ¼ C red onion

Dressing Ingredients:

  • ½ C BBQ (the one I used)

  • ½ C greek yogurt

  • ¼ C mayo (my cleaner go-to mayo)

  • 2 T tamari

  • 2 T hot sauce (used Frank’s classic)

  • ¼ C mustard

  • ¼ tsp paprika

  • 1 tsp salt

  • 1/2 tsp pepper

Directions:

  1. Cook your ground beef with S+P, garlic, and onion powder

  2. Once nearly browned add in the diced green chilies (don’t drain). Let cool

  3. Combine all of your salad ingredients in a large bowl

  4. Toss in the dressing and blow your guests away with this one! Soooo good
