Chicken Caesar Pasta Salad

Chicken Caesar GF Pasta Salad- SO SO GOOD if you are a Caesar salad lover like me!

Chicken marinade ingredients:

  • 2 T Dijon, 1 T avocado oil

  • 1 T dried rosemary

  • 1 tsp minced garlic

  • ¾ tsp kosher salt

  • ¾ tsp black pepper

  • Juice of 1 lemon

Salad ingredients:

  • 4 C chopped romaine

  • 8 oz GF pasta, cooked according to instructions

  • 1 C GF croutons (I used @aleiasgf garlic croutons)

  • 4 slices cooked bacon, chopped

  • 1/3 C fresh grated Parmesan

  • 1 lb grilled chicken breast, diced

Directions:

  1. Tenderize 1 lb of chicken breast (for me this = 2 chicken breasts) with a mallet- this creates an even texture and thickness, thus ends up being evenly cooked with a nice crispyyyyy outside! If you don’t have a mallet don’t sweat it, but I totally recommend! Inexpensive and makes a big difference

  2. Marinate chicken overnight or 2+ hours in marinade

  3. Grill chicken and dice (I used my ninja indoor grill and grilled on medium high for 14 min, flipping half way and then let rest 20 min before fixing)

  4. Mix all salad ingredients in a large bowl, toss with your fav GF Caesar dressing just before serving! I used this one

Sooooo good and a fun spin on a classic Caesar salad. I love the texture combos in this one— crispy romaine, soft noodles, crunchy croutons, creamy dressing! And a more filling pasta salad with the grilled chicken😊 Hope you enjoy as much as I did.

Chicken Caesar Pasta Salad

And a more filling pasta salad with the grilled chicken. Leave out if you are vegetarian and swap chickpeas if desired. Hope you enjoy as much as we did!
