Chocolate Cake With Strawberry Filling

This post is dedicated to my dad, as I made this chocolatey goodness for his birthday :-) Double layered cake and I filled the middle with homemade strawberry filling and frosted it with what I call my "lazy frosting," because it's really just combining pre-made store bought things... but it always is so light and delicious! I was surprised at how much I LOVED this cake, the strawberry honestly makes it, which I definitely did not expect!

Cake

  1. I just bought a gluten-free chocolate cake mix for this cake, and I split the batter in two and baked two 9" round cakes

Strawberry Filling

  1. Place 2 C of strawberries, 1/4 C granulated sugar, and 2 T of lemon juice in a pot and bring to a boil

  2. Reduce to medium heat and stir continuously until the strawberries mash up and the filling thickens

  3. Let cool completely before putting between cake layers

Lazy Frosting

  1. Place 1 tub of cool whip, 1/2 can of your favorite store bought frosting (I used Simple Mills chocolate frosting), 1/2 stick of softened butter, 1/2 C of powdered sugar (if you don't have powdered sugar, it works without), and a splash of vanilla in a large mixing bowl

  2. Beat everything together until smooth; frost your cake and enjoy :-)
