Burrata & Roasted Tomatoes on GF Crostini

This is SO good and is the perfect appetizer to serve at your gatherings!

You’ll need

  •  2 pints of red grape tomatoes

  • 3 T olive oil, divided

  • 5 tsp minced garlic, divided

  • S&P to taste

  • 6 fresh basil leaves, sliced or chopped

  • 2 of your fav GF baguettes (I used Against the Grain rosemary, I find it in the freezer section!) 

  • 16 oz burrata 

  • Balsamic glaze

  1. Halve or quarter your tomatoes (whichever your preference, both work!)

  2. Add to an oven safe dish and add in 2 T EVOO, 3 tsp minced garlic, S&P to taste

  3. Roast tomatoes uncovered at 400 F for 20 min or until tomatoes/juices are bubbling and soft

  4. Slice baguettes into 1/4” slices, spread on a baking sheet and spray (or brush) each slice with a little oil

  5. Roast at 425 F for 8 min (or whatever the baguette instructions say if you use a diff one than I used)

  6. Mix 2 tsp minced garlic with 1 T EVOO and brush it on each crostini after done toasting

  7. Assemble! Add burrata, a spoonful of roasted tomatoes, top with fresh basil and a drizzle of balsamic glaze
