M&M Cake Bars

Perfectly sweet and cake-y, and festive for valentine's day with the pink m&ms. To make these paleo, refined sugar free, and/or dairy free-- just swap the m&ms for your own diet-compliant chocolate. :)

Ingredients:

  • 1/2 C coconut flour

  • 1/3 C maple syrup

  • 2 eggs

  • 1/4 C milk of choice

  • 2 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 1/2 C Valentine's M&Ms, or sub chocolate/mix-in of your choice

Directions:

  1. Line 8x8 or 9x9 baking dish with parchment paper and set aside. Preheat oven to 350 º F

  2. Whisk wet ingredients together and then stir in dry ingredients, except for the M&Ms, until smooth and well combined

  3. Allow batter to sit for a few minutes so that the coconut flour has time to absorb moisture

  4. Lastly, stir in most of the M&Ms, reserving a tablespoon or so to sprinkle on the top

  5. Pour batter into your parchment lined baking dish and place remaining M&Ms scattered over top

  6. Bake for 22-25 minutes, until the middle is set and the edges begin turning golden brown. Toothpick should come out clean from the center

  7. Let cool for 10 minutes before removing from pan; I picked mine up by the ends of the parchment paper and transferred to a cooling rack. Just be careful that your bars don't crumble and fall apart if you decide to do this! Slice before the bars completely cool so that the M&Ms are easier to cut through :)

**Disclaimer: I thought these had a subtle coconut taste from the coconut flour, so if you have an aversion to coconut, this one might not be for you. Though, my mom said she could not taste any coconut!xo, Celiac Sweetie
