Oatless Oatmeal

What this really is... is sweet scrambled eggs. I thought "oatless oatmeal" sounded like less of a turn off ha. I was hesitant to try this myself, but it's seriously delicious and keeps me so much more full than oatmeal does! Much higher in protein and less of a blood sugar spike. Paleo-friendly, too, for those who have additional dietary restrictions. It's totally leftover friendly, too. I often make this the night before and reheat it in the microwave for about a minute at work. Enjoy!

Ingredients:

  • 1/2 C egg whites OR 2 whole eggs

  • 1/2-3/4 scoop vanilla collagen (I use Vital Proteins - you could try a normal vanilla protein powder at your own risk... I have not tried doing this yet! Or you could skip this step and add maple syrup or honey in place to help sweeten)

  • 1/2 of one medium mashed banana

  • 1/4 C fresh or frozen blueberries

  • 1/2 tsp vanilla extract

  • 1 tsp chia seeds

  • 1/4 tsp ground cinnamon

  • 1-2 T shredded coconut

Directions:

  1. First mash your banana - I like to leave some small chunks to add texture

  2. Grease a skillet and heat over medium heat

  3. Whisk in your eggs/whites, cinnamon, collagen, and vanilla extract to your mashed banana

  4. Pour mixture into skillet and cook as you would cook scrambled eggs; stirring frequently

  5. When near done cooking, add 1 T shredded coconut (this helps add texture and healthy fat) and continue scrambling until cooked through, add to serving bowl

  6. To make the blueberry "jam" topping, first warm the blueberries. You can either do this by microwaving for 1 minutes and then mashing with a rubber spatula or fork until you have a juicy mixture, OR you can heat in a small saucepan until the berries break open and you reach a juicy consistency

  7. Add chia seeds to blueberry mixture and stir and let sit for a few minutes, allowing the chia seeds to gel up and absorb the juice (see photo below for before and after the chia seeds gel)

  1. Pour mixture over your sweet scramble and add more shredded coconut, cinnamon, and nut butter and enjoy :) I would love to hear if you try this out!
