Banana Coconut Chocolate Muffins

Disclaimer: there are no actual bananas in this recipe I used Rebbl's Banana Nut Protein elixir to make these!If you've never heard of this company, I totally recommend looking them up (rebbl)! They are AWESOME and I have found them at Whole Foods and Fresh Thyme. They are a little pricey but I often buy them when they are on sale, usually at $2.99/ea. or 2 for $5 which isn't so bad considering the quality! They are made with all organic, real ingredients, and they are dairy free and contain different types of superfoods! They are also fair trade AND donate 2.5% of their profits to "Not For Sale" to support regions vulnerable to exploitation/sex trafficking.Anyways... the recipe... haha

You'll Need:

  • 1/2 C Banana Nut Rebbl elixir

  • 6 eggs

  • 1 C coconut flour

  • 2 tsp baking powder

  • 1 stick of melted butter

  • 1/3 C maple syrup or honey

  • 1 tsp vanilla extract

  • 3/4 C dark chocolate chips

To Make:

  1. Mix the eggs, melted butter, elixir, vanilla and maple syrup until well mixed

  2. Add in coconut flour and baking powder, mix until a thick batter is formed

  3. Fold in the chocolate chips

  4. Line a muffin tin and then spray with nonstick cooking spray

  5. Fill each muffin cup 3/4 of the way full, making 10-12 muffins

  6. Bake at 350 º F for 25-30 minutes and then let cool
