Healthier Taco 7 Layer Dip

Best healthier taco dip, ever! No sour cream or cream cheese, tastes so fresh and flavorful… I can’t stop eating it! 

Ingredients:

  • 16 oz can refried beans

  • 1 avocado, sliced into small chunks

  • ½ C finely diced red onion

  • ½ C cherry tomatoes, quartered or roughly chopped

  • 14 oz jar of corn salsa (I used the corn and Chile one from Trader Joe’s; can sub sweet corn)

  • 1 ½ C whole Greek yogurt

  • 1 C shredded lettuce

  • 2 diced roma tomatoes

  • 2.25 oz can black olives

  • ⅓ C chopped cilantro

  • ⅓ C pickled jalapeño (can sub fresh jalapeño, or omit if sensitive to spice)

  • 1 T taco seasoning (my favorite is Siete)

  • ¾ C Mexican blend shredded cheese

  • Juice of 1 lime


Directions:

  1. Spread refried beans on the bottom for your first layer

  2. For the second layer, combine avocado, cherry tomatoes, red onion, cilantro, jalapeño, juice of ½ a lime, and salt/pepper to taste and add that on top of your first layer

  3. Third layer is your jar of corn salsa

  4. Mix greek yogurt, taco seasoning, and juice of the other ½ of your lime and spread this over the corn salsa

  5. Spread shredded lettuce, then the cheese

  6. For the top layer, sprinkle your black olives, roma tomatoes, and garnish with extra cilantro

  7. Serve with tortilla chips… perfect for game days or any other hosting event!

*To make dairy free, sub DF sour cream or cream cheese in place of Greek yogurt, and DF shredded cheese! And if no corn salsa, could just sub regular sweet corn kernels
