Banana Chocolate Chip Muffins

Flourless, GF, DF, RSF, & nut-free option. 😊 Ingredients are so clean and these are simple to make-- just one bowl!! Recipe below.You'll Need:

  • 3 overripe bananas

  • 3/4 C nut or seed butter (I used half almond, have cashew)

  • 4 eggs

  • 2 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 C your favorite chocolate chips/chunks

  • 1/4 C maple syrup or honey (*optional to add sweetness. I will warn you they are not super sweet with just the bananas, but everybody's taste buds are different!)

Directions:

  1. First mash your bananas in your large mixing bowl (I actually used my electric mixer to do this faster and it worked well)

  2. Add everything else except for chocolate chips/chunks and mix well with electric mixer until smooth

  3. Stir in chocolate chips and then pour into lined muffin tin- fill each cup 2/3-3/4 of the way full as they will rise

  4. Add a few extra chips/chunks to the tops of your muffins (as some of the chips fall to the bottom of the muffins due to the thinness of the batter. Another option is to set chocolate pieces on top immediately after baking and they will melt on top) and bake ~ 12 minutes at 350 ° F

Notes:* if you use sunflower butter, your muffins will still taste delicious, but beware that they will turn green due to the reaction in the oven with the sunbutter & baking soda... 😊 still safe to eat!* this recipe made 17 muffins for me (heart shaped because I made them for Vday!)xo, Celiac Sweetie
