Oatmeal Creme Pies

{Grain free, dairy free, paleo, refined sugar free} 

That’s right, NO OATS… and they taste like the real deal and are more filling than the store bought in my opinion. These used to be my favorite growing up so I am so excited to have this version that I can eat, and that is much healthier 🙂

Use this recipe for the “sandwich” portion of the pies. It is a recipe for gingerbread cookies but seriously tastes and feels like Little Debbie’s oatmeal cream pies. The only thing I did differently was that I did not flatten them, they spread A LOT in the oven and the batch that I flattened turned out reaallyyy flat.

Let them cool completely prior to filling them with frosting. Filling recipe below

  1. Use a hand mixer to cream together 1/2 C palm shortening at room temperature and 1/2 C softened coconut oil

  2. Then mix in 1/3 C maple syrup, 2 tsp vanilla extract, pinch of sea salt

  3. Lastly I added 1/2 C arrowroot starch/powder to thicken

Flip cookies over to fill. Scoop filling into a gallon ziplock and cut one corner for easy piping. Pipe filling onto half of the cookies and then gently press the unfrosted cookies on top to make the sandwiches. I was able to make 9 pies with this recipe 🙂

*You can totally use a store bought frosting or you favorite buttercream recipe to fill these if you don't have dietary restrictions!

*I recommend using the filling right away after you make it (if you refrigerate it, it will harden). If you need to refrigerate, set it out to thaw for 30 minutes to 1 hour before trying to pipe your cookies
