Cookie Dough Bars

This post is a two-for-one! You can either make just the cookie dough part to eat by the spoonful, or you can make them into bars. GF (always), vegan, refined sugar free ;-) and no bake which always seems to make things a little easier!You'll Need

  • 1/2 C cashew butter (can sub with other nut butter but taste will vary)

  • 3/4 C almond flour

  • 1 tsp baking soda (not to be baked, but gives it a little more of a "real" cookie dough flavor!)

  • 1 tsp vanilla

  • 1/4 C maple syrup

  • Dash of salt

  • 1/2 C chocolate chips, I used mini

  • Additional 1/2 C chocolate chips for melting on top

To make

  1. Line a loaf tin with parchment paper, set aside

  2. Put everything except for chocolate into a food processor and process until a ball starts to form

  3. Add in 1/2 C chocolate chips and process again until combined (*if not making into bars, this is the last step. Refrigerate what you don't eat:)

  4. Press dough into the pan and place the remaining chocolate in a microwave safe bowl with 1 tsp of coconut oil

  5. Microwave in 30 second increments, stirring between until fully melted

  6. Pour over cookie dough and spread evenly, then shake the pan gently and tap on counter to get a smoother chocolate layer

  7. Refrigerate and cut into bars when set :)
