2 Bite Double Chocolate Cookies

Super rich and yummy! Dairy free and can be made vegan by using a flax egg in place of the egg, and coconut oil in place of ghee/butter

.You'll Need

  • 1/2 C softened/melted and cooled ghee or butter (I used vanilla bean ghee)

  • 1/2 C granulated sugar of choice (I used Monk fruit sweetener but cane or coconut would work, and possibly brown sugar but I have not tried!)

  • 1/2 C milk of choice

  • 1 egg

  • 1 tsp vanilla extract

  • 1 C dark chocolate chips

  • 1 1/2 C brown rice flour

  • 3 T cocoa powder

  • 1 tsp baking powder

To Make

  1. Beat butter, sugar, vanilla and egg together until smooth

  2. Add in dry ingredients except for the chocolate chips; mix until smooth

  3. Melt 1/2 C of the chocolate chips and stir into the batter until well combined

  4. Then, fold in the chocolate chips and scoop onto a parchment lined baking sheet

  5. Bake for 10 minutes at 350 º F

*note: they do not really spread much in the oven, so if you want them flatter like traditional cookies, flatten them with your hands or a spatula prior to baking (I prefer leaving them in the scoop shape because I like how thick they are that way!)
