"Healthy" Special K Bars

I am pretty sure special K bars, or scotachroo's, are everyone's favorite thing. But now that Rice Krispies are not GF (As of June 2017, sad, I know), I can't really enjoy the real deal. The "real deal" has a lot of extra sugar and butter anyways so I am happy eating this version, and I am pretty sure these taste almost the same. I wish I had made these sooner and I hope you enjoy them, too! Oh, and they're DAIRY FREE & NO BAKE!!!:)

You'll Need:

  • 1 1/4 C peanut butter (all natural if possible, it's much creamier and has no added sugar)

  • pinch of salt

  • 1/4 C maple syrup, honey, or agave

  • 2-2 1/2 C of rice cereal (I used @erewhon brand GF brown rice cereal) depending on the consistency you prefer

  • ~ 1 C dark chocolate chips (I use Enjoy Life dark chocolate)

  • 1 T coconut oil (if you don’t have coconut oil you can could use butter OR just omit, the chocolate will just be harder when set without)

Do it:

  1. Mix the PB, maple syrup or honey, and salt together until smooth (you may need to microwave it a little, I did and that helped me get the mixture nice and smooth!)

  2. Fold in the rice cereal and then press into a 8x8 pan lined with parchment paper

  3. Melt the chocolate with the coconut oil and pour over the PB rice mixture

  4. Let set in the fridge overnight or in the freezer for a couple of hours! Store in the fridge.
