Black Bean Brownies

I have had my fair share of black bean brownies and these are my fav so far! I have included a vegan option at the bottom as well :-) They remind me of the thick, chocolate-y black bean brownies that Grabba Green used to sell! They discontinued them so I am REALLY excited about these. Hope you love!

You'll Need:

  • 1 can low sodium black beans

  • 1/2 C granulated sugar of choice (I have tried coconut sugar & monk fruit)

  • 1/4 C cocoa powder

  • 2 T oil (I used melted coconut oil)

  • 3 eggs

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1 tsp instant espresso (optional but recommended ๐Ÿ˜)

  • Chocolate chips/chunks

Directions:

  1. THOROUGHLY rinse and drain the black beans (I've learned the hard way lol, nobody wants salty bean-tasting brownies), and place in a food processor with the remaining ingredients except the chocolate chips

  2. Process until smooth, so that there are no black bean chunks left (it is a pretty thin/runny batter once itโ€™s all mixed)

  3. Add in the chocolate chips and pulse a couple of times, then transfer to a parchment lined loaf pan (for thicker brownies, pictured) or 8x8 pan and sprinkle chocolate chips on top

  4. Bake at 350 until a toothpick comes out clean. Mine took about 30 minutes in the loaf pan, but should take less time if you are using an 8x8 pan. Enjoy and donโ€™t tell anyone whatโ€™s in them until they finish eating it ๐Ÿ˜œ

*Note- I have not tried these with a blender, but I worry a blender would not create as smooth of a batter/it would be more "bean-y" textured. I am also an avid batter-tester and sometimes I add a little extra cocoa powder or sugar if it does not taste right, so feel free to add until you like it!

*Vegan option- remove eggs & oil and add 2/3 C of nut butter (I.e. peanut, cashew, almond, tahini), and bake the same way!
