Banana French Toast

Ingredients:

  • 1 1/2 banana
  • 7 slices GF bread (I used Canyon Bakehouse 7 grain)
  • 2 T flaxseed meal
  • 2 eggs
  • Splash vanilla
  • 1 tsp cinnamon

Directions:

  1. Whisk all ingredients together (except for the bread) in a medium bowl and cut the bread slices into triangular halves
  2. Heat a greased skillet over medium heat
  3. Soak each slice of bread in the mixture for 2 minutes (unless your bread is not frozen, then 10 seconds or so) and transfer to the skillet
  4. Brown each side of each slice of toast
  5. Add fresh or caramelized bananas, maple syrup, butter, PB, whipped cream, whatever your taste buds are looking for!
